Keto Chilled Chocolate Mint Chip Fat Bombs

TOTAL TIME: 1 hour 25 minutes, including 1 hour for freezing


  • ½ cup / 120 mL heavy cream
  • ½ cup / 15 g fresh mint leaves
  • 8 oz / 225 g cream cheese, softened
  • 3 Tbsp coconut shortening
  • 3 Tbsp monk fruit sweetener
  • ¼ cup / 57 g butter, softened
  • 4 Tbsp / 40 g stevia-sweetened chocolate chips, milk chocolate style


  1. In a microwave-safe bowl combine the heavy cream and mint leaves and microwave on high for one minute. Add additional 30 second intervals until the mix is steaming.

  2. With a spoon mix the mint to submerge and then refrigerate until about room temperature, 15 to 20 minutes.  

  3. Combine the cream cheese, coconut shortening, monk fruit sweetener, and butter until thoroughly and evenly mixed. 

  4. Refrigerate for 15 to 20 minutes. 

  5. Add chocolate chips to the refrigerated mix and stir them in evenly.

  6. Strain out the mint and check the temperature of the cream. Should it seem warm, refrigerate 5 minutes more.

  7. Add the cream to the cream cheese mix, and stir until well blended. 

  8. Portion equal ½ cup portions and drop onto a parchment-lined pan. 

  9. Freeze for 1 hour or until the outside is lightly frozen with the inside cold and soft. Enjoy.
