Keto Bacon Avocado Fat Bombs

- 4 slices bacon, chopped
- ¼ cup ghee
- 1 large avocado, halved and diced
- ¼ cup bacon fat
- 2 cloves garlic, chopped
- 1 small serrano chili, fine chopped
- 1/8 cup chopped white onion
- ½ lime, squeezed
- ¼ tsp sea salt
- ¼ tsp black pepper
- 2 tsp cilantro, chopped
Preheat oven to 325 degrees F. Line baking tray with parchment.
Cook bacon in the oven for 12 to 18 minutes, until crispy. Place on paper towels to drain grease. Chop and set aside.
In microwave-safe container, microwave ghee on low heat for 30 seconds.
Pour ghee into a medium-sized mixing bowl and add flesh of avocado, bacon fat, chopped garlic, chopped serrano and white onion, fresh lime, sea salt, black pepper and cilantro.
With a fork mash until all ingredients are incorporated.
Place in a small bowl and refrigerate for 2 hours until mixture becomes solidified or scoopable.
With a 1-ounce scoop, scoop mixture into balls and onto a plate. Roll balls in chopped bacon. Serve and enjoy.
