Keto Browned Garlic Coconut Savory Waffles

TOTAL TIME: 30 to 45 minutes
- 1 Tbsp butter
- 1 Tbsp raw garlic, minced
- 1 cup / 123 g coconut flour
- 1 cup / 111 g mozzarella, grated
- 1 tsp baking soda
- ¼ tsp white pepper
- 1 tsp sea salt
- 2 tsp unsweetened shredded coconut
- 3 large eggs
- 1 Tbsp green onions, sliced
Preheat a small waffle iron on medium heat setting.
Heat a small saute pan on medium heat for 2 minutes. Add butter and melt. Add garlic and brown, stirring frequently to prevent burning. Remove from heat and place in a small bowl. Set aside to cool.
In a medium sized bowl, combine coconut flour, mozzarella, baking soda, pepper, sea salt and shredded coconut. Stir together to incorporate. Add eggs, browned garlic and green onions. Stir to incorporate. The batter will be slightly dry.
Spray waffle iron liberally with cooking oil. Add ½ cup of batter (or appropriate measurement for waffle iron model). Spread the batter evenly on the waffle iron and cook until crisp. Repeat until all waffles are cooked.
