Ingredients

  • 2 eggs large
  • 1 cup cheddar shredded
  • ¾ cup almond meal
  • 2 tablespoons jalapeños chopped, pickled
  • ¼ cup green chilis chopped
  • ¼ cup bacon cooked
  • 2 cloves garlic chopped
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • cups cauliflower riced and steamed

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C. Grease small muffin pan or silicone molds.
  • In large bowl combine 2 eggs, 1 cup cheddar, ¾ cup almond meal, 2 tablespoons jalapeños, ¼ cup green chilis, ¼ cup bacon, 2 cloves garlic, 1 teaspoon sea salt, ½ teaspoon black pepper, and 2½ cups cauliflower. Mix well.

  • Spoon mixture into muffin tins.
  • Bake for 20 to 25 minutes.
  • Allow to cool before removing from muffin pans. Garnish with sour cream and jalapeños.
