Keto Mediterranean Cauliflower Rice

- 10 ounces of cauliflower florets
- 2 Tbsp olive oil
- 2 cloves minced garlic
- ¼ tsp chili flake
- ¼ tsp sea salt
- ¼ tsp ground black pepper
- 4 Tbsp chopped parsley
- 1 Tbsp lemon juice
- ½ cup sliced almonds
- ½ cup grape tomatoes cut in half
In food processor pulse cauliflower florets into riced cauliflower. You can also grate on a box grater if you don't have a processor.
Heat large skillet over medium high heat. Add olive oil.
Brown cauliflower in skillet for 4 minutes. Add garlic, chili flake, salt, pepper, parsley and lemon juice.
Finish with sliced almonds and tomatoes and enjoy.
