Keto Caprese Chicken

- 1½ lb / 1010 mL chicken breast
- 2 Tbsp / 30 mL olive oil
- 1 tsp / 5 mL salt
- 1 tsp / 5 mL Italian seasoning
- 1 tsp / 5 mL pepper
- 2 cups / 475 mL fresh mozzarella, sliced
- ¼ cup / 59 mL Roma tomatoes, sliced
- ¼ cup / 60 mL fresh basil, cut in thin strips
- 2 Tbsp / 30 mL balsamic vinegar
Preheat the oven to 375 degrees F/ 190 degrees C.
In a bowl, drizzle 1½ Tbsp of olive oil over chicken. Add salt, Italian seasoning and pepper and combine.
In an oven-safe pan over medium heat, add remainder of olive oil. Brown chicken breast on both sides, about 3 minutes on each.
Remove the pan from heat. Put the pan into the oven and bake for 20 minutes.
Top chicken with mozzarella and tomatoes and return to the oven for 3 to 5 minutes.
Top all with fresh basil and drizzle with balsamic. Serve hot.
