Ingredients

  • 2 tablespoons avocado oil
  • 1 tablespoon lemongrass minced
  • 1 tablespoon ginger minced
  • 2 gloves garlic chopped
  • 2 tablespoon shallots chopped
  • 1 serrano pepper chopped
  • 1 cup mushrooms
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 2 limes
  • salt and pepper to taste
  • 2 tablespoons cilantro

Instructions

  • In large stock pot, add 2 tablespoons avocado oil, 1 tablespoon lemongrass, 1 tablespoon ginger, 2 gloves garlic, 2 tablespoon shallots , and 1 serrano pepper.

  • Cook on low for 10 minutes.
  • Add 1 cup mushrooms and cook for five minutes on low.
