Ingredients

  • 6 ounces steak
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ avocado medium
  • 2 tablespoons tomatoes
  • 2 tablespoons onions
  • cilantro
  • 1 teaspoon lime juice
  • 1 pinch salt
  • lettuce
  • 2 tablespoons cheese

Instructions

Steak

  • Let 6 ounces steak sit at room temperature for at least 20 to 30 minutes. Pat steak dry with paper towel.

  • Place pan on medium-high heat.
  • Add salt and pepper to both sides of steak.

  • Add 1 tablespoon olive oil to hot pan, then, gently drop steak into pan.

  • Leave heat on medium. Cook each side for 3 to 4 minutes. Medium steak should have an internal temperature of 135 degrees F / 57 degrees C.
  • For larger steaks, finish cooking in oven at 350 degrees F / 177 degrees C.
  • Rest steak for 10 to 15 minutes before slicing.

Salad

  • Peel skin off of ½ avocado, then cut slices like fan.
  • Chop 2 tablespoons tomatoes, 2 tablespoons onions, and cilantro.

  • Build salad with lettuce, tomatoes, onions, steak, sour cream, 2 tablespoons cheese, and avocado.

  • Add sugar-free vinaigrette or dressing of your choice.
