Ingredients

Cauliflower salad

  • pounds cauliflower florets
  • black pepper to taste
  • sea salt to taste
  • ½ red onion chopped
  • 3 celery stalks chopped

Dressing

  • cup mayonnaise
  • ¾ tablespoon Dijon mustard
  • ¾ tablespoon apple cider vinegar
  • sea salt to taste
  • black pepper to taste
  • 5 bacon cooked, chopped

Instructions

Cauliflower salad

  • In large pot, boil water. Add 1½ pounds cauliflower and cook 8 to 10 minutes until tender. Drain and transfer to large bowl.

Dressing

  • In separate bowl, mix 1½ cup mayonnaise, ¾ tablespoon Dijon mustard, ¾ tablespoon apple cider vinegar, sea salt to taste , and black pepper to taste.

  • Add dressing and 5 bacon to cauliflower mixture. Toss to coat.
