Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon fresh oregano chopped
  • sea salt and pepper to taste
  • 4 ounces feta cheese cubbed
  • 2 cups cherry tomatoes

Instructions

  • Combine 3 tablespoons olive oil, 1 tablespoon lemon zest, 2 tablespoons lemon juice, 1 teaspoon fresh oregano, sea salt and pepper to taste in a bowl.

  • Add 4 ounces feta cheese and 2 cups cherry tomatoes, then toss to coat. Marinate for at least 20 minutes in refrigerator.
