Preheat oven to 400 degrees F / 204 degrees C.
Place 8 3-ounce lamb loin chops in a bowl. Coat with ⅛ cup olive oil and season with 1 pinch sea salt and 1 pinch pepper.

Line baking sheet with parchment paper.
Add 2 tablespoons everything seasoning to a bowl or plate and dip lamb chops into it on both sides, coating well and pressing lightly to adhere the seasoning. Place each on baking sheet.
