Preheat oven to 350 degrees F / 177 degrees C.
Heat a large saute pan for 4 minutes on medium heat. Add 4 cups spinach and 3 tablespoons water. Cook until spinach is wilted.

Remove from pan and cool.
Squeeze out all water from spinach and roughly chop.
Combine 4 ounces cream cheese, ¼ cup yellow cheddar cheese, 2 tablespoons mayonnaise, ¼ cup heavy cream, 1 tablespoon garlic, ½ teaspoon ground white pepper and 8.5 ounces artichoke hearts. Stir thoroughly to combine all ingredients.

Add chopped spinach to the mixture. Stir to combine.
Spray an 8 X 8 inch glass baking dish with cooking oil and add artichoke mixture. Evenly distribute and top with 1 cup mozzarella.

Bake 25 minutes or until cheese is melted, crisp and slightly browned.
