Ingredients

  • 3 eggs large
  • 1 ounce cream cheese
  • 1 pinch salt
  • 1 pinch cream of tartar

Instructions

  • Preheat oven to 300 degrees F / 150 degrees C. Line baking pan with parchment paper or silicone liner.
  • Separate 3 eggs into two bowls, one for yolks and one for whites.

  • Add 1 ounce cream cheese and 1 pinch salt to yolks and blend well with an electric hand mixer.

  • Sprinkle 1 pinch cream of tartar on egg whites, and whip with a clean electric mixer until very stiff.

  • Using a spatula, gradually fold egg yolk mixture into egg white mixture. To keep whipped egg whites fluffy, handle them gently and avoid overmixing.
  • Spoon six mounds of mixture onto prepared baking pan and flatten each mound slightly.
  • Bake cloud bread for 25 to 30 minutes. Cool on a baking pan for three to five minutes, then enjoy!
