Preheat oven to 300 degrees F / 150 degrees C. Line baking pan with parchment paper or silicone liner.
Separate 3 eggs into two bowls, one for yolks and one for whites.

Add 1 ounce cream cheese and 1 pinch salt to yolks and blend well with an electric hand mixer.

Sprinkle 1 pinch cream of tartar on egg whites, and whip with a clean electric mixer until very stiff.

Using a spatula, gradually fold egg yolk mixture into egg white mixture. To keep whipped egg whites fluffy, handle them gently and avoid overmixing.
Spoon six mounds of mixture onto prepared baking pan and flatten each mound slightly.
Bake cloud bread for 25 to 30 minutes. Cool on a baking pan for three to five minutes, then enjoy!
