Preheat oven to 425 degrees F / 220 degrees C.
Coat baking pan with olive oil.
Wash and trim ends off asparagus stalks.
Spread 1 pound asparagus in baking pan, making sure stalks don’t overlap.

Mix remaining 4 tablespoons olive oil, 1 tablespoon garlic cloves, 1 pinch salt and pepper in a small bowl.

Drizzle mixture over asparagus.
Bake asparagus for 10 to 15 minutes or until tender.
Remove asparagus from oven and top with 1½ cups mozzarella cheese.

Return to oven and roast asparagus for a few minutes until cheese is melted and golden brown.
Serve hot, and enjoy with your favorite protein or other low-carb side dishes.
