Keto Asparagus with Cheese and Garlic

Ingredients

  • 1 pound asparagus
  • 4 tablespoons olive oil extra virgin
  • 1 tablespoon garlic cloves minced
  • 1 pinch salt and pepper
  • cups mozzarella cheese shredded

Instructions

  • Preheat oven to 425 degrees F / 220 degrees C.
  • Coat baking pan with olive oil.
  • Wash and trim ends off asparagus stalks.
  • Spread 1 pound asparagus in baking pan, making sure stalks don’t overlap.

  • Mix remaining 4 tablespoons olive oil, 1 tablespoon garlic cloves, 1 pinch salt and pepper in small bowl.

  • Drizzle mixture over asparagus.
  • Bake asparagus for 10 to 15 minutes or until tender.
  • Remove asparagus from oven and top with 1½ cups mozzarella cheese.

  • Return to oven and roast asparagus until cheese is melted and golden brown.
  • Serve hot, and enjoy with your favorite protein or other low-carb side dishes.

Notes

  • This asparagus recipe can be made using other types of cheese, such as feta or Parmesan cheese.  
  • Drizzle fresh lemon juice over roasted asparagus for a burst of citrus flavor.
  • For a quicker version, cook asparagus in water until tender, then top with cheese and broil in the oven until golden brown.  
  • If fresh asparagus spears aren’t available, use frozen chopped asparagus instead. 
  • While many keto asparagus recipes use butter, this version includes olive oil to create a different flavor profile.
