In pan, on medium heat, add 2 tablespoons olive oil. Once heated, add 2 pounds ground beef and 1 onion . Cook until the beef is browned.
Add 1 tablespoon garlic, ¼ cup ketchup, ¼ cup avocado oil mayo, 2 teaspoons kosher salt, ¼ teaspoon black pepper and 1½ cup cheddar cheese . Mix until well incorporated.
Pour in bowl and garnish with remaining 1 cup cheddar cheese .
