Ingredients

  • 8 ounces cream cheese softened
  • ¾ cup coconut flour
  • 1 teaspoon stevia
  • ½ teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg ground
  • 1 cup carrots shredded
  • ½ cup pecans chopped
  • 1 cup unsweetened coconut shredded

Instructions

  • Using rubber spatula, mix 8 ounces cream cheese, ¾ cup coconut flour, 1 teaspoon stevia, ½ teaspoon vanilla extract, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg in large bowl.

  • Fold in 1 cup carrots and ½ cup pecans.

Notes

  • Try lightly toasting the shredded unsweetened coconut before rolling the balls for an extra crunch.

  • Coconut flour can be replaced with almond flour if desired.
  • You can substitute stevia with monk fruit sweetener, manuka honey or homemade low-carb maple syrup.
