Preheat the oven to 375 degrees F (190 degrees C).
In a bowl, drizzle 1½ tablespoons olive oil over 1½ pound chicken breast. Add 1 teaspoon salt, 1 teaspoon Italian seasoning and 1 teaspoon peppercombine.

In an oven-safe pan over medium heat, add remainder of olive oil. Brown chicken breast on both sides, about three minutes on each.
Remove the pan from heat. Put the pan into the oven and bake for 20 minutes.
Top chicken with 2 cups fresh mozzarella and ¼ cup Roma tomatoes. Return to the oven for 3 to 5 minutes.

Garnish with ¼ cup fresh basil and drizzle with 2 tablespoons balsamic vinegar. Serve hot.
