Preheat oven to 375 degrees F / 190 degrees C.
In bowl, drizzle 1½ tablespoons olive oil over 1½ pound chicken breast . Add 1 teaspoon salt , 1 teaspoon Italian seasoning and 1 teaspoon pepper . Combine well, ensuring chicken is evenly coated with seasoning.

In oven-safe pan over medium heat, add remainder of olive oil. Brown chicken breast on both sides, about three minutes on each.
Remove pan from heat and bake for 20 minutes.
Top chicken with 2 cups fresh mozzarella and ¼ cup Roma tomatoes . Return to oven for 3 to 5 minutes.
