Ingredients

  • 2 tablespoons olive oil
  • pound chicken breast
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon pepper
  • 2 cups fresh mozzarella sliced
  • ¼ cup Roma tomatoes sliced
  • ¼ cup fresh basil cut in thin strips
  • 2 tablespoons balsamic vinegar

Instructions

  • Preheat oven to 375 degrees F / 190 degrees C.
  • In bowl, drizzle 1½ tablespoons olive oil over 1½ pound chicken breast. Add 1 teaspoon salt, 1 teaspoon Italian seasoning and 1 teaspoon pepper. Combine well, ensuring chicken is evenly coated with seasoning.

  • In oven-safe pan over medium heat, add remainder of olive oil. Brown chicken breast on both sides, about three minutes on each.
  • Remove pan from heat and bake for 20 minutes.
  • Top chicken with 2 cups fresh mozzarella and ¼ cup Roma tomatoes. Return to oven for 3 to 5 minutes.
