Ingredients

  • 9 tablespoons butter unsalted
  • ¾ cup xylitol
  • 11 tablespoons Dutch cocoa powder
  • pinch sea salt
  • 2 eggs
  • ¾ cup almond flour finely ground

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Combine 9 tablespoons butter, ¾ cup xylitol, 11 tablespoons Dutch cocoa powder, and pinch sea salt in saucepan.

  • Place pan on stove and warm over medium-to-low heat for two minutes or until butter is melted. Remove pan from stove.
  • Using whisk, mix all ingredients thoroughly and add 2 eggs until well combined.

  • Add ¾ cup almond flour to mixture and whisk until batter is smooth.

  • Spray 8x8 baking pan with avocado oil spray.

  • Pour batter into prepared baking dish and bake for 20 to 25 minutes.
  • Remove from oven and let baking dish cool slightly on rack.
  • Sprinkle with sea salt flakes before cutting and serving.

Notes

  • Remove brownies from the oven when a toothpick inserted into the center comes out with a few moist crumbs sticking to it.  
  • Add less almond flour if you prefer fudgier brownies. 
  • You can substitute almond flour with coconut flour to create a nut-free version.  
  • Incorporating baking powder into the keto brownie batter results in a lighter bake with a slightly cakier texture.
  • Monk fruit sweetener is a suitable alternative to xylitol. 
  • To create different low-carb brownie versions, add nuts, sugar-free chocolate chips, vanilla extract, or a little nut butter to the brownie batter.
