Beat 1 egg, then pour into dry ingredients. Add 1 tablespoon unsalted butter and ⅛ teaspoon vanilla extract to mixture and stir until thoroughly combined.

Gently fold in 3 tablespoons mini dark chocolate chips.

Divide batter evenly into eight greased mini muffin molds.
Bake Brownie Bites for 10 to 12 minutes or until toothpick inserted into center comes out clean.
Let cool for 3 to 5 minutes before removing from pan and serving warm.
