Ingredients

  • 6 eggs large
  • ¼ teaspoon cream of tartar
  • 1 cup almond flour
  • ½ cup coconut flour
  • 4 tablespoons butter softened
  • 1 tablespoon baking powder
  • 1 pinch salt

Instructions

  • Preheat oven to 350 degrees F / 176 degrees C.
  • Separate egg yolks from egg whites.

  • With an electric mixer, beat egg whites and ¼ teaspoon cream of tartar until whites form a stiff peak.

  • In a food processor or blender, combine 1 cup almond flour, ½ cup coconut flour, egg yolks, 4 tablespoons butter, 1 tablespoon baking powder, and 4 tablespoons butter.

  • In small batches, gently fold egg whites into flour mixture.  Once fully incorporated, bake in loaf pan lined with parchment paper for 30 to 35 minutes.
