Ingredients

Stew Beef

  • 6 ounces stew beef
  • 1 onion medium
  • 2 stalks celery

Soup

  • tablespoons avocado oil
  • ¼ onion diced
  • 1 carrot large, chopped
  • 2 stalks celery chopped
  • 1 cup cauliflower rice
  • 2 cups beef broth
  • 1 tablespoon parsley minced

Instructions

Stew Beef

  • Cook 6 ounces stew beef with 1 onion and 2 stalks celery in slow cooker on high for 4 to 6 hours.

  • Add 1½ tablespoons avocado oil, ¼ onion, 1 carrot, and 2 stalks celery to pan. On medium-low heat, cook veggies for about 10 minutes.
