Let 6 ounce steak rest at room temperature for 20 minutes.

Pat steak dry with paper towel to achieve good sear. Season steak with 1 pinch sea salt and 1 pinch pepper on both sides.

Place pan on medium-high heat and add 1 tablespoon avocado oil. When oil is hot, place steak in pan, dropping steak away from you to prevent any hot oil from splashing.

Lower heat to medium, not moving steak for 2 to 3 minutes to create crispy sear.
If steak was at room temperature, cook each side for 3 to 4 minutes.
For medium steak, use a meat thermometer and remove from pan when internal temperature reaches 135 degrees F / 57 degrees C.
Allow steak to rest for five minutes before slicing. This helps natural juices to absorb back into meat.
