Ingredients

  • 2 tablespoons avocado oil
  • 3 cloves garlic sliced
  • ¼ cup onion diced
  • ¼ cup green bell pepper diced
  • ¼ cup red bell pepper diced
  • cup black beans with some liquid
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • 2 cups cauliflower rice
  • ¼ cup chicken broth
  • Salt to taste

Garnish

  • Avocado
  • Cilantro
  • Lime

Instructions

  • In sauce pot, pour 2 tablespoons avocado oil.
