This Cauliflower “Mac” and Cheese with Sausage replaces pasta with tender cauliflower, coated in a creamy cheese sauce and combined with hearty sausage for a satisfying low-carb meal.

In medium pot, boil heavily salted water. Add 1½ cups cauliflower. Cook 7 to 9 minutes until soft. Drain and set aside.

In separate pot, melt 1 tablespoon butter over medium. Add 1 clove garlic and ¼ onion. Cook on medium-low five minutes to sweat. Do not brown.

In small casserole dish, combine sausage, cauliflower, and cheese sauce. Mix thoroughly.
Top with ¼ cup colby jack cheese and ¼ pork rinds. Bake for 10 minutes, or until topping is crisp.
