Sausage

  • 1 tablespoon butter
  • ¼ onion large
  • 2 chicken sausages sliced

"Mac" and Cheese Sauce

  • cups cauliflower small florets
  • 1 clove garlic minced
  • ¼ onion large
  • 1 tablespoon butter
  • 1 cup colby jack cheese shredded
  • 2 tablespoons heavy whipping cream
  • ½ teaspoon xanthan gum
  • ¼ cup colby jack cheese shredded
  • ¼ pork rinds crumbled

Garnish

  • Fresh parsley chopped

Instructions

  • Preheat oven to 400 degrees F / 204 C.

Sausage

  • Heat pan over medium. Melt 1 tablespoon butter. Add ¼ onion and 2 chicken sausages. Cook 5 to 7 minutes, stirring occasionally. Do not brown onions.

  • In medium pot, boil heavily salted water. Add 1½ cups cauliflower. Cook 7 to 9 minutes until soft. Drain and set aside.

  • In separate pot, melt 1 tablespoon butter over medium. Add 1 clove garlic and ¼ onion. Cook on medium-low 5 minutes to sweat. Do not brown.

  • Lower heat. Add 2 tablespoons heavy whipping cream and 1 cup colby jack cheese. Stir gently until melted.

  • Add ½ teaspoon xanthan gum gum to thicken. Stir until smooth.

  • In small casserole dish, combine sausage, cauliflower, and cheese sauce. Mix thoroughly.
  • Top with ¼ cup colby jack cheese and ¼ pork rinds. Bake for 10 minutes, or until topping is crisp.
