Preheat oven to 350 degrees F / 177 degrees C.
Cut 1 cup cauliflower into small florets for even cooking.

In pan over medium heat, heat 2 tablespoons avocado oil. Add ¼ cup onion and cook over medium-low for 5 minutes.

Add cauliflower to pan. Increase heat to medium. Sauté for 5 minutes. Transfer cauliflower and onion mixture to small oven-safe dish.

In sauce pot over medium heat, combine ¼ cup cheddar cheese and ¼ cup heavy cream. Stir until melted and smooth. Add ¼ teaspoon xanthan gum and stir to thicken.

Pour cheese sauce over cauliflower mixture. Bake for 20 minutes.
Top with ¼ cup chopped bacon and 1 tablespoon chopped green onions.
