Ingredients

  • 1 cup cauliflower
  • ¼ cup cheddar cheese shredded
  • ¼ cup onion finely diced
  • ¼ cup chopped bacon (about 3 whole slices), cooked
  • ¼ teaspoon xanthan gum
  • ¼ cup heavy cream
  • 2 tablespoons avocado oil
  • 1 tablespoon chopped green onions

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Cut 1 cup cauliflower into small florets for even cooking.

  • In pan over medium heat, heat 2 tablespoons avocado oil. Add ¼ cup onion and cook over medium-low for 5 minutes.

  • Add cauliflower to pan. Increase heat to medium. Sauté for 5 minutes. Transfer cauliflower and onion mixture to small oven-safe dish.

  • In sauce pot over medium heat, combine ¼ cup cheddar cheese and ¼ cup heavy cream. Stir until melted and smooth. Add ¼ teaspoon xanthan gum and stir to thicken.

  • Pour cheese sauce over cauliflower mixture. Bake for 20 minutes.
  • Top with ¼ cup chopped bacon and 1 tablespoon chopped green onions.
