Ingredients

  • 1 egg white
  • 1 pound pecan halves
  • 3 teaspoons cinnamon ground
  • ½ teaspoon sea salt
  • ½ cup erythritol

Instructions

  • Preheat oven to 325 degrees F / 163 degrees C.
  • Line baking sheet with parchment paper or silicone mat.
  • In large bowl, beat 1 egg white until frothy but not stiff.

  • Combine 3 teaspoons cinnamon, ½ teaspoon sea salt, and ½ cup erythritol in small bowl.

  • Add cinnamon mixture to nuts, then blend until fully combined.
  • Pour nuts onto prepared baking sheet and spread out evenly.
  • Bake for 20 minutes, stirring halfway through to prevent burning.

  • For added flavor, include vanilla extract or other spices, such as nutmeg, allspice, or ginger.
  • For the best results, use raw pecans in this recipe. If you opt for roasted pecans, simply shorten the baking time by five minutes.
  • To achieve a more caramelized coating, you can use unsalted butter or coconut oil in place of the egg white, if preferred.
  • You can also use Swerve brown sugar substitute instead of erythritol to achieve a look and consistency similar to traditional candied pecans.
