Ingredients

  • ½ cup almond flour blanched
  • ½ scoop whey protein unflavored
  • ½ teaspoon erythritol powdered
  • ½ teaspoon baking powder
  • ¼ teaspoon xanthan gum
  • 70 grams water

Instructions

  • In medium bowl, combine ½ cup almond flour, ½ scoop whey protein, ½ teaspoon erythritol, ½ teaspoon baking powder, ¼ teaspoon xanthan gum, and 70 grams water. Stir until smooth, thick batter forms.
  • Grease mini cast iron skillet and place over low heat. Add batter and spread evenly. Cover and cook 5 to 7 minutes or until set and edges release.
  • Once cooled cut in half. Add butter or sugar-free jam and enjoy.
