Ingredients

  • ½ cup almond flour blanched
  • ½ scoop whey protein unflavored
  • ½ teaspoon erythritol powdered
  • ½ teaspoon baking powder
  • ¼ teaspoon xanthan gum
  • 5 tablespoons water

Instructions

  • Preheat oven 350 degrees F / 175 degrees C.
  • In medium bowl, combine all ingredients. Stir until smooth, thick batter forms.
  • Grease mini cast iron skillet and place over low heat. Add batter and spread evenly. Cover and cook 5–7 minutes, until set and edges release.
  • Once it's cooled cut it in half horizontally, and cut those half's in half to make 4 slices of toast.
  • Add butter and toast. Enjoy!
