Cheesy Keto Cauliflower Bites
Top these cauliflower bites with sour cream, green onions, bacon, and green onions: think loaded potato!!!
TOTAL TIME: 30 minutes
SERVES: 3 (2 cauliflower bites per serving)
Riced Cauliflower - 1 cup
Egg - 1 large
Shredded Cheese - 1/2 cup
Sour Cream - 2 tablespoons (plus a little bit more for garnish)
Bacon - for garnish
Scallion - for garnish
Tomato - for garnish
Preheat oven to 400 degrees.
In a bowl, mix together riced cauliflower, shredded cheese, sour cream and beaten egg.
Divide the mixture in 6 equal portions in silicone molds or muffin tray.
Bake for 15-20 minutes.
Garnish with bacon, scallion, tomatoes, and more sour cream!
Do you want pretty/curly scallions for garnish? Cut the green part thin and put it in freezing cold ice water.
