Keto Strawberries and Cream Mug Cake

TOTAL TIME: 3 minutes


  • 4 Tbsp / 60 mL almond flour

  • 1 Tbsp / 15 mL sweetener/sugar substitute

  • ½ tsp / 2.5 mL baking powder

  • pinch of salt

  • 2 Tbsp / 30 mL heavy cream

  • 1 large egg, beaten

  • 1 Tbsp / 15 mL butter, melted

  • 1 tsp / 5 mL pure vanilla extract

  • 2 strawberries, diced

  • 1 fresh strawberry for topping, optional


Whipped Cream

  • ½ cup / 118.3 mL heavy cream

  • 1 Tbsp / 15 mL sugar substitute


  1. Combine almond flour, sweetener, baking powder, and salt in a 12 oz mug or larger; stir to combine.

  2. Add in heavy cream, egg, melted butter, vanilla extract, and diced strawberries; stir just until everything is combined, but don't overmix.

  3. Microwave on high for 90 seconds to 2 minutes. Test for doneness; add a few seconds as necessary, but don’t overcook.

  4. Remove from microwave and allow to cool a bit while you whip the cream.

  5. Once it has had time to cool, remove cake from mug.

  6. Top mug cake with 1 tablespoon prepared whipped cream and a strawberry; serve.


Whipped Cream

  1. In a medium mixing bowl combine heavy whipping cream and sweetener; whisk together until mixture begins to firm up. Taste for sweetness and adjust accordingly.
