Keto Pumpkin Blondies
Per serving: 172 calories, 3 g protein, 6 g carbohydrates, 16 g fat
TOTAL TIME: 30 to 45 minutes, including prep, baking and cooling
- ½ cup / 113 g butter, melted
- ½ cup / 48 g powdered monk fruit sweetener
- 1 large egg
- ¼ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- 1/8 tsp ground clove
- 1/8 tsp ground nutmeg
- ½ cup / 130 g canned pumpkin puree
- 1 tsp vanilla extract
- 1/3 cup / 32 g almond flour
- 1/3 cup / 50 g chopped walnuts
Preheat oven to 350 degrees F / 177 degrees C.
Spray an 8 X 8” square baking dish generously with baking spray.
Combine melted butter, monk fruit sweetener, egg, salt, cinnamon, ginger, clove, nutmeg, pumpkin puree, vanilla and almond flour. Stir until well mixed. Add half the walnuts and stir to incorporate.
Bake for 15 to 20 minutes.
Cool for 15 minutes and garnish with remaining chopped walnuts.
