Ingredients

  • 3 to 6 ounces steak grass-fed
  • salt and pepper to taste kosher, ground
  • 1 tablespoon avocado oil
  • 1 tablespoon butter grass-fed
  • 2 eggs large
  • ½ avocado medium

Instructions

  • Allow steak to sit at room temperature for about 30 minutes before cooking.
  • Pat steak dry with paper towel and season with salt and pepper to taste.

  • Heat a cast iron skillet on medium-high heat until hot.
  • Add 1 tablespoon avocado oil to hot skillet and gently drop 3 to 6 ounces steak into pan away from you to prevent splashing. Lower heat to medium and sear steak for 2 to 3 minutes per side.

  • Turn off heat and move steak onto plate. Let rest for 10 minutes before slicing to allow juices to redistribute.
  • In a separate small skillet, melt 1 tablespoon butter over medium-low heat.
