Ingredients

  • 1 cup almond Flour
  • teaspoon salt
  • tablespoons Erythritol powdered
  • 3 tablespoons butter room temperature
  • ½ teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In medium bowl, mix 1 cup almond Flour , ⅛ teaspoon salt, and 3½ tablespoons Erythritol.

  • Use hands to mix and pinch 3 tablespoons butter until well blended. Add ½ teaspoon vanilla. Knead into ball.

  • Pinch off chunks and roll into balls about one inch in diameter. Place on parchment or silicone mat-lined pan.
  • Press balls slightly with palm of your hand or fork.
  • Bake for 8 to 10 minutes. Avoid browning cookies.

  • Melt keto-friendly dark chocolate and dip half of each cookie for an extra treat.
