Ingredients

For Blackberry Mixture

  • 4 ounces cream cheese
  • 2 tablespoons butter
  • ½ teaspoon vanilla extract
  • cup blackberries
  • 1 tablespoon erythritol

For Lemon Cream

  • 1 cup heavy whipping cream
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • ¼ cup erythritol powdered

Instructions

For blackberry mixture

  • Add 4 ounces cream cheese, 2 tablespoons butter, 1 tablespoon erythritol, ½ teaspoon vanilla extract and ⅓ cup blackberries.

  • Mash berries and mix well.

For whipped topping

  • In blender or stand mixer, whip 1 cup heavy whipping cream.

  • Place whipped cream in bowl. Add 1 lemon zest, 1 tablespoon lemon juice, and ¼ cup erythritol.

  • Gently fold into whipped cream.
  • Build your fat bombs. Place blackberry mixture in cupcake mold. Top with lemon cream mixture.
  • Place in freezer for at least 10 minutes before serving.
