Ingredients

  • 4 eggs large
  • 1 tablespoon sour cream
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon Dijon mustard
  • Salt to taste
  • 3 green onions
  • 1 teaspoon smoked paprika

Instructions

  • Place 4 eggs in pot and cover with water, then bring to boil over high heat.

  • Once boiling, remove pot from heat and cover with lid. Let sit for 6 to 8 minutes.
  • Prepare ice bath by filling bowl with cold water and ice cubes.
  • Carefully remove hard-boiled eggs from hot water using tongs or slotted spoon and place into ice bath.
  • Once cooled, peel eggs and cut in half lengthwise.
  • Separate egg yolks from whites and place in bowl.
  • Add 1 tablespoon sour cream, 1 tablespoon mayonnaise, 1/2 teaspoon Dijon mustard, and Salt to taste to egg yolks and mix until well combined.

  • Fill each halved egg white with egg yolk mixture using small spoon or piping bag.
  • Slice 3 green onions thinly and place in ice water to create decorative curl.
