Place 4 eggs in pot and cover with water, then bring to boil over high heat.

Once boiling, remove pot from heat and cover with lid. Let sit for 6 to 8 minutes.
Carefully place eggs in ice bath to stop from overcooking.
Once cooled, peel eggs and cut in half lengthwise.
Separate egg yolks from whites and place in bowl.
Add 1 tablespoon mayonnaise, 1 tablespoon sour cream, 1/2 teaspoon Dijon mustard and 1 pinch salt to egg yolks. Mix until well combined.

Fill each halved egg white with egg yolk mixture using small spoon or piping bag.
Slice 3 green onions thinly and place in ice water to create decorative curl.
