  • ½ onion medium
  • 1 bell pepper large
  • 1 celery stalk
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 tablespoon tomato paste
  • 14.5 ounces stewed tomatoes
  • 1 cup chicken broth
  • 1 pound ground beef

Garnish

  • Green Onion to taste
  • Sour Cream to taste
  • Cheese to taste

Instructions

  • Dice ½ onion, 1 bell pepper, 1 celery stalk, and 2 garlic cloves.

  • Heat 2 tablespoons olive oil in large saucepan and add diced vegetables, allowing them to "sweat." Sauté vegetables over low heat for at least 10 minutes.
  • Add 2 tablespoons chili powder, 1 tablespoon tomato paste, 14.5 ounces stewed tomatoes, 1 cup chicken broth, and 1 pound ground beef. Let simmer for 20 minutes.
  • Garnish with Green Onion to taste, Cheese to taste, and Sour Cream to taste, and serve.
