Ingredients

  • 2 tablespoons grass-fed butter
  • ¼ cup onions
  • 2 cups chicken broth organic
  • ¼ cup heavy whipping cream
  • 2 cups cheddar cheese grass-fed
  • 1 teaspoon xanthan gum
  • 1 cup broccoli

Instructions

  • In sauce pan, melt 2 tablespoons grass-fed butter over medium heat. Add ¼ cup onions and cook for 10 minutes until translucent.

  • Add 2 cups chicken broth and let simmer for another 10 minutes.

  • Blend broth and onion mixture until smooth using heat-safe blender.
  • Return mixture to pot and add ¼ cup heavy whipping cream and 2 cups cheddar cheese. Whisk continuously to prevent burning.

  • Add 1 teaspoon xanthan gum over mixture and whisk until soup thickens.

  • Cut 1 cup broccoli into small florets.

  • Bring pot of salted water to boil and add broccoli. Cook until soft, then drain.
  • Pulse cooked broccoli in food processor until finely chopped.
  • Add broccoli to soup mixture and cook for additional five minutes.
  • Serve hot with your preferred side dishes, or enjoy by itself.

Notes

  • For a spicy kick, include diced jalapeños or red pepper flakes.
  • Substitute the chicken broth for vegetable broth to make a vegetarian-friendly version.
  • For a creamier consistency, include cream cheese or sour cream.
  • If fresh broccoli is not available, you can use frozen broccoli. Just thaw and drain well before adding it to the dish.
