Ingredients

Sausage Gravy

  • 1 pound pork sausage organic
  • 1 tablespoon butter
  • ½ teaspoon thyme
  • 1 cup heavy cream
  •  ¼ cup cream cheese

Biscuits

  • 1½ cups almond flour
  • 1 tablespoon baking powder
  • ½ teaspoon garlic powder
  • 2 eggs large
  • ½ cup cheddar cheese
  • cup sour cream
  •  ¼ cup butter melted
  • 1 pinch salt

Instructions

Sausage Gravy

  • Cut 1 pound pork sausage into small chunks and cook in pan over medium heat until browned and cooked through.

  • Once fully cooked, place sausage on paper towel to soak up excess fat.
  • In separate saucepot, melt 1 tablespoon butter over medium heat. Add keto sausage and stir to combine.

  • Season with ½ teaspoon thyme
  • Gradually add 1 cup heavy cream and  ¼ cup cream cheese, stirring until mixture is well combined and thickened.

Biscuits

  • Preheat oven to 350 degrees F / 175 degrees C.
  • Combine 1½ cups almond flour, 1 tablespoon baking powder, and ½ teaspoon garlic powder in mixing bowl.

  • Add 2 eggs, ½ cup cheddar cheese, cup sour cream, melted  ¼ cup butter, and 1 pinch salt. Mix until dough forms.

  • Scoop dough in molds or muffin tray.
  • Bake for 25 minutes until biscuits are golden brown.
  • Once biscuits are done, cut in half and serve with sausage gravy spooned over top.

Notes

  • You can adjust the amount of heavy cream and cream cheese to reach your desired consistency for the keto gravy. 
  • Use spicy ground pork sausage or add red pepper flakes to the gravy for a spicier version.
  • Let the biscuits cool slightly before cutting them in half, as they can crumble if cut too soon.
  • Your leftover keto sausage gravy can be stored in the fridge for up to four days and reheated on the stovetop.
  • Use xanthan gum as a thickening agent if you prefer a thicker gravy.
  • Add organic beef or chicken broth to the gravy for added flavor.
