Ingredients

  • 3 cups olive oil for deep frying
  • 1 pound zucchini
  • 1 egg large
  • 1 tablespoon water
  • ½ cup almond flour
  • 1 teaspoon pink Himalayan salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ cup Parmesan cheese grated
  • ¼ cup sour cream
  • 2 tablespoons chives minced, fresh

Instructions

  • Pour 3 cups olive oil into saucepan and heat over medium-high heat.

  • Cut 1 pound zucchini into 3-inch strips about half an inch thick.

  • Combine 1 egg and 1 tablespoon water in small bowl and whisk until well blended.

  • In a shallow dish, combine ½ cup almond flour, 1 teaspoon pink Himalayan salt, ½ teaspoon onion powder, ½ teaspoon garlic powder, and ½ cup Parmesan cheese.

  • Dip zucchini sticks into egg wash, then coat with almond flour mixture.
  • Carefully place coated zucchini strips into saucepan and fry until golden brown.
  • Remove Zucchini Fries from oil and place on paper towels to drain excess oil.
  • In separate bowl, prepare dipping sauce by mixing ¼ cup sour cream and 2 tablespoons chives.
