Ingredients

  • ½ cup water
  • 4 cups spinach
  • 1 pound ground turkey 85 percent lean
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic salt
  • ½ teaspoon black pepper
  • 2 cloves garlic chopped
  • 1 egg large
  • 1 tablespoon coconut flour

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Add ½ cup water to large pan. Bring to boil.

  • Add 4 cups spinach, cover, and simmer two minutes.

  • Uncover, stir, cover again, and simmer 3 to 5 minutes until wilted. Set aside and cool completely.
  • In large bowl, combine 1 pound ground turkey, 1 tablespoon dried basil, 1 tablespoon dried oregano, 1 teaspoon garlic salt, ½ teaspoon black pepper, and 2 cloves garlic.

  • Add 1 egg and 1 tablespoon coconut flour to mixture and stir until well blended.

  • Squeeze moisture from cooled spinach using strainer, chop finely, and stir into meat mixture.
  • Grease 9x13-inch glass baking dish. Divide mixture into six equal meatballs.
  • Bake 15 to 20 minutes, until lightly browned.
  • Serve hot with keto-friendly sides.

  • If you prefer a crispier meatball, broil for an additional two to five minutes before removing them from the oven.
  • You can substitute ground turkey with grass-fed ground beef or organic chicken if desired.
  • Almond flour can replace coconut flour, but may change the texture of the meatballs.
