Preheat oven to 375 degrees F / 190 degrees C.
In a skillet, melt ⅓ cup butter, then add 1½ pounds ground beef and 3 tablespoons Tex-Mex seasoning.

Cook until meat is browned and no longer pink. Add 1 cup tomatoes, then season with Salt and pepper to taste.

Top with ¼ cup pickled jalapeños and ⅓ cup cheddar cheese.
