Taco night doesn’t have to feel off-limits. These Keto Tacos strike the perfect balance between hearty richness, bold flavor, and a surprisingly light finish.
Preheat oven to 350 degrees F / 177 degrees C. Prepare baking sheet with parchment paper or silicone mat.
Spread 1 cup cheddar cheese evenly on baking sheet, dividing into three rounds, approximately three inches in diameter.

Bake cheese taco shells for 7 to 10 minutes until edges start to become golden brown.
Take out from oven and let cool for two minutes. Then, remove from baking sheet and carefully fold in half to create taco shells. For added stability, place shells in taco stands.
Scoop cooked and seasoned ½ cup ground beef into shells. Top with ½ cup romaine lettuce, ¼ cup tomato, 4 tablespoons cheddar cheese, and 3 teaspoons sour cream.

Ground turkey, chicken, or pork are excellent taco meat options to replace ground beef.
