Ingredients

  • ¾ cup coconut flour
  • ¾ cup almond flour
  • ½ cup monk fruit sweetener powdered
  • 6 tablespoons butter softened
  • 1 egg large
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon golden monk fruit sweetener

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In medium bowl, combine ¾ cup coconut flour, ¾ cup almond flour, ½ cup monk fruit sweetener, and 6 tablespoons butter. Use hands to blend until no clumps remain.

  • Add 1 egg and 2 teaspoons vanilla extract Stir with rubber spatula until smooth, sticky dough forms.

  • Scoop 18 equal tablespoon-sized portions of dough and roll into balls.
  • In small bowl, mix ½ teaspoon cinnamon and 1 tablespoon golden monk fruit sweetener.

  • Roll each dough ball in cinnamon mixture until generously coated.
  • Place on lined baking sheet. Flatten center with spoon.
  • Bake 9 to 12 minutes, until edges are set and lightly browned.
