Ingredients

  • 2 boneless chicken breasts boneless, sliced in half
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 egg white
  • 1 cup pistachios unsalted, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C.
  • Season 2 boneless chicken breasts with 1 pinch sea salt and 1 pinch black pepper.

  • In medium bowl, beat 1 egg white until frothy.

  • Dip chicken into egg white mixture, then coat with 1 cup pistachios.

  • In oven-safe skillet, heat 3 tablespoons olive oil over medium-high heat.

  • Add coated chicken to skillet and cook for about five minutes on each side or until golden brown.
  • Transfer skillet to oven and bake for 10 to 15 minutes, or until internal temperature of chicken reaches 165 degrees F / 74 degrees C.
  • Remove from oven and let rest for five minutes, then garnish with 1 tablespoon fresh parsley before serving.

Notes

  • Use a food processor or rolling pin to crush pistachios into small, fine pieces.
  • Add garlic powder, onion powder, or Dijon mustard to the egg-white mixture for added flavor.
