Ingredients

Pie crust

  • cups almond flour
  • ¼ teaspoon baking soda
  • tablespoon butter melted, grass-fed, unsalted
  • ¼ teaspoon salt
  • 1 organic egg
  • ¼ teaspoon vanilla extract
  • 1 tablespoon erythritol powdered

Pie filling

  • 3 eggs beaten
  • 1 cup erythritol
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter melted, grass-fed, unsalted
  • 1 cup maple syrup sugar-free
  • cups of pecan halves

Instructions

Pecan pie crust instructions

  • Preheat oven to 350 degrees F /177 degrees C.
  • In food processor, mix 1½ cups almond flour, ¼ teaspoon baking soda, 1½ tablespoon butter, ¼ teaspoon salt, 1 organic egg, ¼ teaspoon vanilla extract, and1 tablespoon erythritol. Combine until ball of dough forms.

  • Place dough into pie pan and use hands to press evenly along bottom and sides.
  • Bake for 8 to 10 minutes or until crust is golden brown. Set aside.

  • In large bowl, combine 3 eggs, 1 cup erythritol, 1 teaspoon vanilla extract, 2 tablespoons butter, and 1 cup maple syrup.

  • Add 1½ cups of pecan halves and stir to coat evenly with pie filling mixture.

  • Pour filling into pre-baked pie crust.
  • Bake at 350 degrees F / 177 degrees C for 45 minutes or until set and golden brown on top.
  • Serve warm and enjoy!
