  • 2 ounces pork rinds crushed
  • ½ cup Parmesan cheese grated
  • ½ cup coconut flour
  • 2 eggs large, beaten
  • 1 tablespoon heavy whipping cream
  • 1 white onion medium

Instructions

  • Preheat oven to 425 degrees F / 225 degrees C.
  • In one bowl, combine 2 ounces pork rinds and ½ cup Parmesan cheese.

  • Set up breading station with four bowls: ½ cup coconut flour in the first, 2 eggs in the second, 1 tablespoon heavy whipping cream in the third, and pork rind–Parmesan mixture in the fourth. Arrange in order for easy coating.

  • Slice 1 white onion into thick rounds and separate into rings.

  • Serve warm with your favorite keto-friendly dipping sauce.
