Preheat oven to 425 degrees F / 225 degrees C.
In one bowl, combine 2 ounces pork rinds and ½ cup Parmesan cheese.

Set up breading station with four bowls: ½ cup coconut flour in the first, 2 eggs in the second, 1 tablespoon heavy whipping cream in the third, and pork rind–Parmesan mixture in the fourth. Arrange in order for easy coating.

Dredge each ring in coconut flour, then dip in egg, coat with cream, and roll in pork rind-Parmesan mixture. Place on lined baking sheet.
Bake 15 minutes, until crispy and golden.
