Ingredients

  • ½ pound beef ground, 85% lean
  • ½ pound pork ground
  • 1 egg large, beaten
  • ¼ cup Parmesan cheese grated
  • ¼ cup heavy cream
  • 1 clove garlic minced
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • ¼ cup olive oil extra virgin

For serving

  • 2 cups marinara sauce low-carb

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C and move rack to center position.
  • Line a rimmed baking sheet with parchment paper.
  • Place ½ pound beef and ½ pound pork in a medium bowl, break meat into smaller chunks, and combine evenly.

  • Add remaining ingredients to the meat and mix by hand until just combined. Don’t over-mix to achieve light and tender meatballs.

  • Lightly oil hands with olive oil and roll meatball mixture into 1.5-inch balls. Space meatballs evenly on baking sheet and bake for 15 to 20 minutes.
  • Once meatballs are done, serve with hot 2 cups marinara sauce and add salt and black pepper to taste.
