Ingredients

  • 10 ounces chicken canned, drained
  • ¼ cup avocado oil mayonnaise
  • ½ cup celery chopped
  • ¼ cup green onions sliced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dried tarragon
  • ½ teaspoon sea salt
  • ¼ teaspoon white pepper
  • 1 head butter lettuce

Instructions

  • In large bowl, combine 10 ounces chicken, ¼ cup avocado oil mayonnaise, ½ cup celery, ¼ cup green onions, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 tablespoon dried tarragon, ½ teaspoon sea salt, and ¼ teaspoon white pepper. Mix well with rubber spatula.

  • Remove core from 1 head butter lettuce. Rinse and pat dry. Set aside six whole leaves.

  • Place lettuce leaves on serving dish. Fill each with chicken mixture.
  • Serve immediately.

Notes

  • If you're not a fan of canned chicken, use cooked and shredded chicken breast or rotisserie chicken.
