  • 3 carrots shredded
  • ¼ head red cabbage shredded
  • 6 springs green onions sliced
  • 2 garlic cloves minced
  • 1 tablespoon ginger minced
  • 2 tablespoons fish sauce
  • tablespoons rice vinegar unseasoned
  • 1 tablespoon sriracha sugar-free
  • 1 pound ground pork

Instructions

  • In large skillet, heat 1½ tablespoons olive oil over medium heat.

  • Add 6 springs green onions, 2 garlic cloves, and 1 tablespoon ginger. Then, cook for about one minute until fragrant.

  • Season mixture with 2 tablespoons fish sauce, 1½ tablespoons rice vinegar, and 1 tablespoon sriracha.

  • Add 1 pound ground pork and sauté until fully cooked and no longer pink.

Notes

  • You can substitute ground pork with ground beef. While you can also use ground turkey, it has a lower fat content, which may result in a different flavor profile and texture. 
  • To infuse even more Asian-inspired flavors, add toasted sesame oil and sugar-free sweet and sour sauce before adding ground pork.  
  • If you prefer a spicier egg roll bowl, add crushed red pepper flakes, hot sauce, or low-carb sweet chili sauce. 
  • You can use ground ginger if you don’t have minced ginger.   
  • Using red and green cabbage introduces a vibrant color contrast and a mix of flavors.   
  • Top your keto egg roll bowl with a fried egg for extra protein and healthy fats.
