Season chicken 1 pound chicken breast with ½ teaspoon sea salt and ¼ teaspoon black pepper. Set aside.

Heat skillet over medium high heat and add 2 tablespoons olive oil.

Sear chicken breasts on both sides, remove from skillet and set aside.
Add 2 garlic cloves to pan, then deglaze pan with ½ cup chicken broth.

Add ⅔ cup heavy cream, 1 tablespoon thyme, and 2 tablespoons whole grain mustard. Add chicken back to pan, place in oven and bake for 6 to 8 minutes.

Remove chicken from oven and slice meat.
Place chicken over a bed of 1 cup baby arugula and spoon sauce over the top. Garnish with 2 tablespoons parsley and enjoy.
