Ingredients

  • 1 pound chicken breast
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 garlic cloves chopped
  • ½ cup chicken broth
  • cup heavy cream
  • 1 tablespoon thyme fresh, chopped
  • 2 tablespoons whole grain mustard
  • 2 tablespoons parsley fresh
  • 1 cup baby arugula

Instructions

  • Season chicken 1 pound chicken breast with ½ teaspoon sea salt and ¼ teaspoon black pepper. Set aside.

  • Heat skillet over medium high heat and add 2 tablespoons olive oil.

  • Sear chicken breasts on both sides, remove from skillet and set aside.
  • Add 2 garlic cloves to pan, then deglaze pan with ½ cup chicken broth.

  • Add ⅔ cup heavy cream, 1 tablespoon thyme, and 2 tablespoons whole grain mustard. Add chicken back to pan, place in oven and bake for 6 to 8 minutes.

  • Remove chicken from oven and slice meat.
  • Place chicken over a bed of 1 cup baby arugula and spoon sauce over the top. Garnish with 2 tablespoons parsley and enjoy.
