Ingredients

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 2 cups colby cheese shredded
  • 4 eggs
  • 1/3 cup half-and-half

Instructions

  • Preheat oven to 350 degrees F / 175 degrees C. Line a baking sheet with parchment.
  • Combine 2 cups almond flour and 1 tablespoon baking powder in a large bowl. Mix in 2 cups colby cheese by hand and create a small well in the middle of the bowl. Add 4 eggs and 1/3 cup half-and-half to the center. Use a large fork or spoon, blend all ingredients until a sticky batter forms.

  • Drop 9 portions of batter onto the prepared baking sheet.
